There are potatoes, and then there is Poulette: the result of a transatlantic courtship between a French heirloom and a New York potato.
In 2013, legendary French chef Michel Bras and potato breeder Dr. Walter De Jong met at conference about seed hosted by @chefdanbarber and started talking potatoes—specifically about Bras’ beloved French heirloom, Institut de Beauvais.
Walter crossed it with a classic New York potato, kicking off a decade of breeding, tasting, and testing with chefs and farmers across the country.
The result? Poulette: savory, rich, and deeply roasty. Bake it. Fry it. Mash it into the best mashed potatoes you’ve ever had.
An ode to Michel Bras, and to the belief that something as humble as a potato is worth a decade of pursuit.

I am absolutely obsessed with the adorable Sugarcone cabbage from @row7seeds. They are the perfect size for roasting, and because they are especially bred to have tender leaves and a mild, sweet flavor, they cook quickly. I’ve glazed them with a rich and spicy gochujang butter and served it with a creamy yet tangy whipped kimchi tofu. This is a cabbage showstopper!
This is the perfect vegetable main for the holidays…but honestly, it is also quick enough to make on a weeknight.

Our collaboration with Row 7 brings their Koginut squash to the center of the plate, pan roasted and complemented by cashew cheese, shiso, mizuna, fermented garlic scapes, pepitas, and black apple saba.
It’s an approach to food we love: curiosity in the kitchen, respect for what’s grown, and an appreciation for everything that happens before an ingredient reaches the plate.

During brunch, ‘til 3pm:
BROWN RICE AND KOGINUT SQUASH by @itscarlnotkarl
four star mushrooms, apple soffritto, sorrel, preserved meyer lemon aioli, sunny side egg
During dinner, starting at 4:30pm:
ROASTED KOGINUT SQUASH by @raeannjrich
chestnut mushrooms, poached prunes, hazelnut, radicchio
(pro tip: pairs super well with @twoshepherdswine soleil albarino)
The dishes will be on our menu for a little while, but only available with Row 7’s delicious Koginut squash until October 29th 🎃

Here’s a peek into the process of our @row7seeds collab sandwich! We use the entirety of both their Koginut Squash and Sweet Garleek.
For the sweet garleek, we take the green tops and turn them into a powder that seasons the fries that accompany the sandwich. We use the bottoms of the garleek in the slaw that’s in the sandwich.
For the koginut squash, we use the skins to create an oil inspired by XO. The flesh of the squash is poached in a stock made from the stems and bottoms of the garleek and squash. Then it gets dehydrated and rehydrated to create a textural patty.
The guts and seeds of the squash are used to create a sauce inspired by Carolina gold sauce. Any leftover offcuts are sliced thin, dressed in XO, and combined with garleek to create the slaw.
