It’s finally happening! My Cajun & Garlic & Herb Seasonings are live on Amazon. We have worked so hard on both blends and I cannot wait to hear what y’all think! 🌶️ 🧅 ✨
I started posting on social media in late 2021, and if someone had told me back then how much progress we would make in just a few years, I wouldn’t have believed it. Even now, it feels surreal to me. I am so thankful for the community we have created and the overwhelming support I have received. Thank you for giving me the opportunity to share my passion for cooking, and I hope my Cajun seasoning can offer you a taste of my home state, Louisiana!

This is my easy baked mac & cheese! 🧀 No roux and no stand up squares in my house! I like mine creamy, smooth, BUT cheesy without being too heavy. Just that perfect happy medium!
I’m curious, do y’all think there’s such a thing as too much cheese? 👀

Episode 2 of Louisiana Cookin’ I Grew Up On: Crawfish Étouffée! 🦞⚜️
Comment RECIPE and I’ll send it over!
Ingredients:
* 2 lbs Louisiana crawfish tails
* 2 sticks butter
* ½ cup all-purpose flour
* 1 large onion, diced
* 1 large bell pepper, diced
* 1 stalk celery, diced
* 4–5 cloves garlic, minced
* 32 oz unsalted seafood or vegetable stock
* Britscookin Cajun Seasoning, to taste
* 1 tsp Britscookin Garlic & Herb Seasoning
* 1 tsp Better Than Bouillon Lobster Base (optional)
* Black pepper and cayenne, to taste
* A bunch of green onions, chopped
* Cooked white rice, for serving
Directions:
1. Melt butter in a Dutch oven over medium heat. Add your Cajun trinity (onion, bell pepper, and celery) along with 1 tsp Cajun seasoning. Let the veggies cook down for 15–20 minutes until nice and soft.
2. Push the veggies to the side and gradually whisk in the flour. Once incorporated, stir everything together and add your minced garlic. Cook for another 15–20 minutes, stirring often, until your roux turns a pretty peanut butter color. Lower your heat if needed so nothing sticks or burns!
3. Pour in your seafood or veggie stock. Season with another 1–3 tsp Cajun seasoning, Garlic & Herb, lobster base, black pepper, and cayenne to taste. Bring everything to a boil for about 5 minutes, then reduce to a simmer.
4. Add your Louisiana crawfish tails and simmer for another 5–10 minutes, just long enough for them to heat through and soak up all that good flavor.
5. Turn off the heat, stir in your chopped green onions, and serve over a big scoop of white rice!

Cajun Crockpot Potato Soup! Comment “RECIPE” & I’ll send it over! 🥣 🧀
Ingredients:
* 2–3 lbs potatoes, cubed
* 1–2 tbsp olive oil
* 2 celery stalks, diced
* 1 small red onion, diced
* 3 green onions, chopped
* 1 cup cubed tasso
* 1 tbsp minced garlic
* Britscookin Cajun seasoning, salt & pepper
* Chicken broth (enough to cover) ~32oz
* 8 oz shredded sharp cheddar
* 1 cup heavy cream
* 12–14 oz smoked sausage, sliced
* Sour cream & extra cheese for topping
Directions:
1. Drizzle olive oil into your crockpot, then add potatoes, veggies, tasso, garlic & seasonings.
2. Pour in enough broth to just cover everything. Give it a stir & cook on HIGH for 4 hrs or LOW for 6 hrs, until potatoes are tender.
3. Mash a few potatoes right in the crockpot to thicken the soup, then stir in cheddar & cream.
4. Brown your sausage in a skillet, then toss it into the soup with some green onions.
5. Top with sour cream & extra cheese. So good, y’all!
Tip: Go easy on seasoning since tasso & sausage add lots of flavor. Freshly shredded cheddar melts best! Also, if you want it thicker without having to mash the potatoes too much, you can add a cornstarch slurry! Start with 1 tbsp cornstarch and 2 tbsp water, then adjust as needed. 😊

Episode 1 of Louisiana Cookin’ I Grew Up On: Smothered Pork Chops & Rice and Gravy! ⚜️
Comment RECIPE & I’ll send it over.
Ingredients:
* 3–4 lbs bone-in pork chops
* Britscookin’ Cajun Seasoning, to taste
* Garlic powder
* Onion powder
* Black pepper
* Mild hot sauce, to taste
* Olive oil
* 1 large onion, diced
* 1 bell pepper, diced
* 4–5 cloves garlic, minced
* Water or chicken broth, as needed
* Optional: Cornstarch or flour slurry to thicken
* Cooked white rice, for serving
Instructions:
1. Season your pork chops! Season generously with Britscookin’ Cajun Seasoning, garlic powder, onion powder, black pepper, and a little mild hot sauce. You can add a drizzle of olive oil and let them marinate if you have time.
2. Get a good sear! Heat olive oil in a heavy-bottom pot. I use my Magnalite, but cast iron works too! Brown your pork chops on both sides, letting them sit undisturbed for several minutes before flipping. You want those brown bits at the bottom of the pot. That’s flavor!
3. Cook down your veggies. Remove the pork chops and add your onion, bell pepper, and garlic to the same pot. Let them cook down, scraping up all that goodness from the bottom. Add a splash of water if needed to deglaze.
4. Mash those veggies! Once they’re nice and soft, mash them down with your spoon. This helps create that good, flavorful gravy!
5. Make your gravy. Add the pork chops back to the pot along with enough water or chicken broth to partially cover them. Adjust your seasoning and bring to a boil.
6. Low and slow! Reduce the heat, cover, and let simmer gently until the pork chops are nice and tender. Give it time! The longer your gravy simmers, the more flavor it develops. Check occasionally and add more liquid as needed.
7. Thicken your gravy. Once the meat is tender, let some of the liquid cook down until your gravy reaches your desired consistency. Those mashed veggies will naturally help thicken it! If you prefer a thicker gravy, add a little cornstarch or flour slurry and let it simmer a few more minutes.
Serve over white rice and enjoy! #riceandgravy
