Ever heard of serving wine with its ‘head cut’? 🍷✂️
This was what I experienced for the first time at @marquesderiscal when we tasted the 1950 and 1960 vintages and I swear it was neither the French or the Spanish revolution! It is a traditional technique used for older bottles of wines to ensure a clear pour, and also let the wine breathe and fully open up.
By cutting the “head” the sommelier carefully separates the wine from the sediment that settles over time on the neck of the bottle and prevents the cork from crumbling and making a mess when serving. To achieve this mission, some sommeliers bring their medieval torture device to the kitchen: Port tongs.
How does it work? The tong needs to be very very hot before it is clamped around the neck of the bottle. It stays for a few seconds to warm the bottle until it cracks the glass and cuts it straight leaving the most OCD of us very satisfied. The wine can then be decanted in a carafe sometimes with the help of a candle that brings some light to observe the sediments and time the decanting process.
Have you ever drunk a head cut wine?

Think Rioja is all about the classic reds?
❌ Think again! Because if Tempranillo is the undoubtedly star of the region, there are other wines that could surprise you.
In the region, you can even spot some of them by looking at the bar wine list: they are often cited as author wines next to the more traditional categories like Crianza, Reserva or Gran Reserva.
👀 Let’s check our reel to discover 3 original wineries.

Ever felt lost when someone said the wine tastes oaky? What does it even mean?
Wood (essentially oak) can be used for fermentation and/or ageing wine (red or white) - but it’s not mandatory. Originally, barrels were used to transport wine more easily, but this tradition stuck - and that’s great news, because oak and wine make magic together.
WHAT DOES OAK AGEING DO TO WINE?
✨ It adds texture, whether it is creaminess for whites like Chardonnay, or extra tannins for reds.
🍫 It also adds flavours to the wine, such as vanilla, caramel, smoke, leather, tobacco or chocolate.
🧑🔬 It enables small quantities of oxygen to be in contact with the wine through the pores of the barrel → makes it smoother & softens the tannins
The goal? To give extra flavours without overpowering the fruits and freshness of the wine!
THE VARIOUS TYPES OF OAK AGEING
⏳ Ageing time matters → the longer wine stays in the barrel, the stronger the oak impact.
📏 Size & age matter:
* Small barrel (barrique): more wood contact = more flavours transferred to the wine
* New barrel: maximum flavour extraction (@winefolly compares it to tea, whose extraction is reduced after each use)
* Large or used barrels: more subtle oak flavours but great for oxygenation.
🌳 Type of oak matters:
* American oak: more pronounced flavours (such as vanilla, caramel or coconut) → good for bold wines like Napa Cab Sav.
* European oak (the most famous? French, of course!): slower but more complex flavour transfer (spices, toasted nuts, coffee, leather) and silkier tannins → ideal for more subtle wines like Pinot Noir ou Chardonnay.
🔥 Each oak also has a different level of toasting (temperature and time at which the barrel is made) giving different aromas, such as spice, caramel, roasted nuts, char or smoke.
💰 Barrels are very expensive → some turn to oak staves or chips placed in stainless steel tanks. It’s more affordable, but it’s harder to control the result.
So in the end, all of the choices about oak depends on the style of wine you intend to make and the money you can put in it!

What do Bordeaux and Rioja have in common?
Barrels! Honestly, I’ve never seen so many in my life - this place is a barrel heaven. 👀
Bordeaux definitely made its mark here, especially with its barrel ageing techniques, which became crucial in establishing Rioja red wines’ style, and part of their success on the international market.
And barrels are soooo important that Rioja wines are classified by how long they age in them: Joven, Crianza, Reserva and Gran Reserva.
Do you know how long a Gran Reserva is aged in oak?

Not all heroes wear capes, but Tempranillo definitely does! 🦸
Like Zorro, it is a masked gentleman, going by different names, and different wine styles, from fruity rosés to age-worthy reds...
Rooted in Spanish traditions but loved all around the planet, Tempranillo has a youthful intense energy with its tasty aromas of juicy red fruits - but give it time and our hero will reveal its elegance and wisdom, with smoky aromas, leather, and spices!
You can count on Tempranillo for a dramatic entrance, making the moment you open a bottle special, and just like Zorro has friends like Bernardo to help him achieve his missions, Tempranillo also makes for fantastic blends with Garnacha and its other buddies! 👯♂️

Rioja is the heart of Spanish wine culture – but what makes it so special? 🤔
Located in the North-East of Spain 🇪🇸 and surrounded by mountains, this famous region is where Atlantic and Mediterranean influences meet, creating diverse landscapes and climates.
They have a long winemaking tradition and make a majority of reds, with Tempranillo as the #1 grape variety, although it can be blended with Garnacha, Graciano, and Mazuelo.

There’s one thing too big, too intense to be added to that map about Rioja, and yet it is deeply intertwined with our experience of this Spanish region: its generosity.
Generosity in the wines, with deep reds perfumed with all sorts of black fruits, spices, and chocolate.
A wine that has aged for a while, that took time and care to be ready and to be shared.
But also the Joven, the “young” wines that are perfect for a moment together and celebrate the daily joys.
And all the diversity of wines Rioja offers, from zesty whites to age worthy reds.
But the generosity of the region goes beyond the glass of wine.
It’s everyone talking loudly in the streets of Haro, “the capital of Rioja”, a glass filled to the brim in one hand, a pintxo (the traditional sandwiches of the region) in the other.
It’s people dancing, talking to friends, talking to strangers, and making the most of each day.
It’s how wine is everywhere, for everyone, and both locals and travellers are welcome to the party 🍷
So this December, we bring the party to you, and you’re invited to discover Rioja with us! 🥳🇪🇸

One year ago, I was savouring croquetas in Paris 😋, having no idea what was going to happen to me. I was just living my best foodie life you know, even though Paris doesn’t quite have the Spanish vibe!
And fast forward to April, I got some amazing news!
@wsetglobal and @peterarijs awarded me the Rioja Wine Academy prize for my results at the tasting exam of the Diploma, which consisted in a study trip to Rioja this November. 🇪🇸
And guess what? We are ready to share all about this trip and Rioja, an iconic Spanish wine region Iris also visited few years ago.

My date quietly ran away after I told him that… 😢
I didn’t have the chance to explain that not only dead yeasts in wine are perfectly normal, but also harmless, and even yummy!
So if you want your date to last longer than mine, here’s what you should know about lees (aka dead yeast):
‼️NO YEAST = NO WINE
Yeast plays a significant role in winemaking, as part of the fermentation process. It can be added or naturally present in the cellar / grape skin.
They eat the sugar present in the juice (called the must) which turns it into alcohol.
☠️A DEADLY SUGAR RUSH
But what happens after that ? Don’t want to freak you out if you have a sweet tooth, but once the yeast have eaten all the sugar they start to die 😞
The biggest sediments - gross lees - are removed straight after fermentation because they can give unpleasant aromas to the wine.
WHY DO WE KEEP SOME OF THE LEES IN THE WINE?
Fine lees can be left in contact with certain white wines for a certain period of time (from 3-4 months to few years), which modifies:
🍦The texture: giving more body and creaminess to the wine, especially when lees are stirred in barrels (in French, we call that “bâtonnage”, from the word “bâton” which means stick)
🍞The flavours: with aromas of bread dough, brioche, nuts which add more complexity to the wines
But lees ageing is not necessary for red wines, because they get texture from the grape maceration before pressing and from tannins (present in grape skins, stems and seeds).
WANT TO TASTE LEES?
Try a white Burgundy, a Champagne or a Muscadet Sèvres et Maine!

Wine is a journey - and, just like art or food, you don’t need to know wine to enjoy it, just trust your senses! But be careful, once you catch the wine bug, you’ll always be thirsty for more knowledge. (and bottles, obvs 😉).
That’s definitely what happened to us: when we met at uni, we had no idea we’d be fully working in the wine industry and wine certified with the DipWSET before 30!
So if you need a little fast track, here’s what we wish we knew from the beginning…
🗣️ No one knows everything about wine. Even experts are constantly learning → don’t be shy to speak your mind (trust your taste buds!), or ask questions - the only way to get rid of the stuffy image attached to the wine industry is to normalise this! Your voice should be heard and leads the way towards a more inclusive wine industry 💪
💸 Price doesn’t necessarily equals quality! You don’t need to spend $$$ on wine or to try the most famous bottles or oldest vintages to learn about wine: start simple, with some supermarket classics and gems from wine shops!
🤨 It’s ok not to like wines that “you should like” - your perception and palate will evolve with time and practice, and even so, by learning you’ll be able to differentiate personal taste and quality!
🤝 Befriend the indie wine shop staff - they love to help and you’ll be able to learn from them, whether it is about grape variety, wine regions or food pairings!
👯♀️ Having a wine buddy will help motivate you, as well as wine groups of professionals so look around because you’re going to find your wine people. Plus, wine always tastes better when it’s shared!
📝 Take notes and pictures of bottles tasted: you’ll taste so many wines in your life, it can be sometimes challenging to remember them all. So take your notebook, computer or phone to keep track.
📖 If you want to learn about wine you don’t have to resort to a dusty 1000-page textbook, there are plenty of great and fun resources, whether it is books, podcasts or Instagram accounts - comment FUN WINE STUDIES and we’ll DM you our faves!

Fun fact: ‘Côte d’Or’ means the Golden Slope
And Côte d’Or is indeed the golden child of Burgundy, home to some of the world’s most sought-after Pinot Noir and Chardonnay wines!
But there is a whole pyramidal system to classify wines there, which can be a bit tricky to understand… but we’re here to tell you step by step what you should look for in Côte d’Or wines!
