Recipe:
Earl grey mascarpone cream
- 3 egg yolks
- 80g granulated sugar
- 3 earl grey tea bags, cut open
- 1tsp vanilla
- Pinch salt
- 230g (8oz) mascarpone
- 300g heavy cream, chilled
- A pack of ladyfingers (you won’t use all)
Matcha soak
- 7g matcha powder sifted
- 100g warm water
- 2tsp sugar
Filling:
1. In a blender, blitz the granulated sugar and earl grey until it becomes a fine powder
2. Add the blitzed sugar + earl grey mixture to the egg yolks and place over a double boiler. (The bottom of the bowl shouldn’t touch the water). Whisk until doubled in size
3. Add the vanilla and salt and set aside.
4. To another bowl, add the mascarpone and heavy cream. Whip until medium peaks form (do not over-whip otherwise it will become grainy)
5. Add the egg yolk mixture to the cream and gently fold until incorporated.
Matcha soak:
1. Sift the matcha powder and whisk (preferably with a bamboo whisk or a hand frother) with the warm water and sugar.
Assembly:
1. Dip each ladyfinger into the matcha soak and cover the bottom layer of the baking dish. Optionally sift a layer of matcha powder before layering the cream
2. Add 1/2 of the cream mixture and evenly spread over using a spatula.
3. Repeat steps 1-2 once more
4. Chill for at least 5 hours, ideally overnight
5. Before serving, dust with matcha and enjoy

CHAI TEA SOAK:
3 chai tea bags
1 1/2 cups hot water
CHAI CHOCOLATE MASCARPONE:
1/4 cup plus 1 tablespoon (60 grams) granulated sugar
1 chai tea bag
3 large pasteurized egg yolks
2 ounces (60 grams) semisweet, dark, or milk chocolate, finely chopped
1 teaspoon vanilla extract
1 cup (230 grams) mascarpone
1 1/4 cups (300 grams) cold heavy cream
ASSEMBLY:
About 24 crisp ladyfingers, or as needed
3 tablespoons (15 grams) unsweetened Dutch-process cocoa powder, for dusting

The BEST chewy chai spice sugar cookie recipe!!
I made 2 versions here, a classic vanilla sugar cookie and chai sugar cookie!!
*If you want to make regular sugar cookies, simply omit the spices.
Best chewy sugar cookie base
Makes 12 large or 16 medium
- 2 sticks butter (226g), room temp
- 180g brown sugar
- 50g granulated sugar
- 2 chai tea bags (I used the ones from Trader Joe’s)
- 50g maple syrup (or maple butter)
- 1 egg, room temp
- 2tsp vanilla
Dry
- 300g all purpose flour
- 1tbs cornstarch
- 1/2tsp baking powder
- 1/2tsp salt
- 1/4tsp baking soda
- 1/2tsp chai spice (or sub with cinnamon)
Chai sugar
- 90g granulated sugar
- 2 chai tea bags
- 1/4tsp chai spice (or cinnamon)
Prep
Ensure butter and egg are at room temperature.
Preheat oven to 350°F.
Line a baking tray with parchment paper.
1. In a food processor or blender, blitz the sugar with the contents of the chai tea bag.
2. In a separate bowl, add the butter, maple syrup, brown sugar, and the chai sugar from Step 1. Using a stand mixer, beat for 3 minutes until slightly pale.
3. Add the room-temperature egg and vanilla, then beat again until just combined (1–2 minutes).
4. In a separate bowl, combine all the dry ingredients. Add this to the butter-sugar mixture.
5. Gently fold with a spatula until just combined and no flour streaks remain.
6. In the blender, prepare another batch of chai sugar.
7. Divide dough into portions (around 50g each) and roll in the chai sugar.
8. Bake at 350°F for 10–11 minutes. Halfway through (at the 5–6 minute mark), remove the cookies from the oven, tap the pan on the counter and finish baking. (This helps flatten the cookies a bit.)

Pumpkin bread
-Using maple butter instead of syrup (probably the same thing though)
- Added 35g miso paste instead of salt
Cream cheese frosting
-Added vanilla bean paste and some salted caramel sauce that I had left over

Coconut Yuzu Chiffon Cake 🥥🍋✨

Fluffy coconut chiffon layered with a tart yuzu curd and yuzu coconut frosting. Using the liquid gold @theyuzuco YUZUCO 100% Yuzu juice and CANDIED YUZU PEEL for this recipe!!

Makes 1- 9 inch cake
Coconut Chiffon Cake
* 5 eggs, separated yolks and white
* 110g granulated sugar (divided: 55g + 55g)
* 110g AP flour
* ½ tsp baking powder
* 65g water
* 65g unrefined coconut oil (melted)
Yuzu Curd
* 2 eggs
* 50g granulated sugar
* 50g YUZUCO 100% Yuzu juice
* 50g unsalted butter, cubed
* 15g YUZUCO candied yuzu peel, finely chopped
Yuzu Cream Cheese Frosting
* 1 block (8 oz / 225g) cream cheese, softened
* 200ml heavy cream
* 80g powdered sugar (use 100g if you would like it sweeter)
* 3 tbsp YUZUCO 100% yuzu juice
* ½–1 tsp coconut extract (optional, but recommended)
Garnish
* coconut flakes
* Extra candied yuzu peel
