Chef Dan Barber joins me at the barn for the final episode of Be My Guest season 8! I loved learning how to make Dan’s miso-crusted winter squash. The saltiness of the miso balances the sweetness of the squash, and it’s a perfect example of how you really only need a few good ingredients, prepared thoughtfully, to make a great dish! Many years ago, in a scraggly-looking field in Utah, breeder Joseph Lofthouse handed me a tomato that blew my mind: meaty, musky, unlike any I’d ever tasted. Ever since, we’ve been growing and selecting Joseph’s Promiscuous Tomato population at Stone Barns. It went late this year—these tomatoes keep going, long after the others die, which is a good sign. Cooks and farmers taste the crop and save seeds from the standouts, chasing that flavor.
