Talk about a full circle moment. 🥹 Almost 10 years ago, acclaimed chef Marcus Samuelsson @marcuscooks was a judge on Chopped Junior, where BANH co-founder Aidan Friedson competed and won twice! Aidan later went on to work at two of Marcus’s restaurants, learning firsthand from the chef who once judged him. Fast forward to today, Marcus got to taste Aidan’s food once again while hosting a signing for his newest cookbook, Back to Green, at Books & Books in Coconut Grove, now home to BANH. From Chopped Junior to a restaurant of his own, and a familiar face back at the tasting table. 24 Oct 2026

Back where it all started @univmiami Last week I got to come back and share with the community where my journey started. @banhlovesyou started from my buisness partner’s @phuocv dream of opening a Banh Mi shop. We launched with no outside funding, worked 12-hour days, and handed out samples to anyone who would stop. One sample turned into a sale, then a regular, then a community that keeps showing up for us. So grateful to Professor Susan Amat for having me at “Taste of Entrepreneurship” and for everything she does for student founders. And to Luis Mata of Meat N’ Bone for sharing the “No Shelf Life” panel. Hearing how he built his brand was inspiring, and I’m so excited we connected. BANH at Books & Books is celebrating ONE YEAR in Coconut Grove! 🥖📚✨ What began as an unexpected, and delicious, meeting of Vietnamese flavor and literary charm has become a beloved part of the Grove’s food scene.
