Chickpeas, sausage, and kale simmered in a spicy tomato sauce then finished with melted and blistered mozzarella and pecorino, and scooped onto garlic bread is the best thing to have waiting for you when you get home, full stop.

RIGATONI ALLA VODKA This is the pasta I crave every fall and my way is quick, not-too-heavy, and full of flavor from the silkiest sauce. Rigatoni, with its wide tubes and big bite, are my favorite here. Dinner tonight is sorted, yes?

A deeply toasty brown butter, brown sugar caramel tart with salted peanuts in a crisp shortbread shell. You finish it with a dollop of sour cream, which is cold and perfect here. I also include instructions to make this as salted peanut bars.
