Fridge-cold steak rarely cooks that evenly, leave it out of teh fridge for at least an hour before it touches salt, oil or a pan. Step 2 - Pat it dry. Any surface moisture will slow down the cooking of the steak as it will struggle to reach a temperature high enough for the first couple of minutes. Oil, it lightly to stop it sticking, then salt it liberally. Step 3 - Fry the steak over a high heat, and flip it every 30 seconds, making sure to move it around the pan regularly. This significantly reduces that dry, overcooked layer beneath the surface. Frequent flips also prevent the meat from scorching while building a more uniform caramelised crust by constantly cooling and reheating the surface. Step 4 - Finish the steak in the oven at 180°C on a cooling rack set over a tray. Don’t be too prescriptive about time - I like to pull mine out of the oven when the internal temperature registers around 49°C - which then moves up to the mid to late 50°C’s as it rests. Step 5 - Allow the steak to rest for 10-15 minutes. This step is crucial to ensure that the steak finishes cooking, and the juices move outwards from the centre to rehydrate the outer edges that naturally dry out a little more. As the fats in the steak cool down, they become thicker too meaning they are less likely to spill out when sliced. Step 6 - Cut the steak from the bone, then slice it into thick strips, against the grain. You should be able to see which direction the muscle fibres are orientated, cut perpendicular to those. 14 Oct 2026 The perfect mushroom risotto.
