Yum Gai Sheek (ยำไก่ฉีก)
A super old-school Thai salad that kind of disappeared for a while… but according to my parents, it’s having a quiet comeback in Chiang Mai right now.
This is the beauty of Thai “salads” — you work with what you’ve got. Freshly grated young coconut, toasted dry coconut, roasted cashews… it often depends on where in Thailand you’re from (and what’s in the pantry).
Mum also told me the OG version was actually made with frogs 🐸, before it evolved into chicken for the newer generations.
It’s insanely refreshing and honestly such a good way to use up leftover chicken in summer if you’ve got some kicking about.
Not one that’s in the book exactly, but the crucial element here is Nam Prig Pow — which is in the cookbook. Think jammy, savoury, tamarind-tangy, almost like a Thai XO sauce. If you haven’t tried it in a Thai salad yet, this is your sign.

I could actually cry. 🥹
Here she is — the cover.
And yep, that really does say Foreword by @jamieoliver . Still feels wild to type that one out 🥹🫣
The very first version of this cover happened in London — me, trying (and failing) to play it cool while Jamie handed me the chance to shoot a draft of my book with the legend himself, @davidloftus . When it came time to re-create the moment later, it was… tricky. Turns out the secret ingredient was a healthy dose of Nat-style chaos — getting genuinely hungry and ready to eat the noodles mid-shoot 😂 Messy, fun, and very, me.
It’s been just over a year since that London trip and… wow. To everyone who’s supported me, eaten my endless cooking, put up with my overly motherly feeding habits (and the mess that comes with them) — you know who you are 🤭 This one’s for you.
Huge thanks to @simonnpdavis @hardiegrantbooks and everyone who helped make this real 💗
Pre-orders are officially live — you know where to find the link 😉

Spent a day at @greenrhino_mx , our good mate Richard Hart’s bakery in Mexico City 🥖
We only meant to pop in and say hi, but @richardhartbaker gave us heaps of his time (and Henrietta’s @rareteacompany ). We tried a few pastries, then came back the next morning to actually get our hands dirty with Ale, their head baker and the rest of the team.
First up was mixing every dough on the menu. It was los dia de los muertos (Day of the Dead) and @f1 weekend, so the team was pumping out loaves and pan de muerto faster than @kimi.antonelli … 🤣
We shaped baguettes, tiger rolls, helped out on the almond croissants and a few other sweets, and learnt so much from this ridiculously lovely crew. Huge thanks for letting us on the bench and sharing all that knowledge.
After lunch we got out of the way and let the pros do their thing. What a time of year to be here.
Muchas gracias, Green Rhino 💛
Much love x

🌭🇹🇭 For her Laab Bar takeover next Sunday, Nov 8, Ohm is taking Nat’s Thai: Anywhere and Everywhere Aussie Bunnings sausage sizzle back north with housemade Sai Ua + Nam Prik Noom.
Fun fact: Ohm spent a few years in Sydney before moving to NYC, so this one feels meant to be.

My cookbook turns one today 🔥🎂🇹🇭
I feel so proud to call myself Thai, and so lucky to share our food with people all over the world. If this book has taught anyone anything, I hope it’s that Thai food can live literally anywhere and everywhere. There’s so much depth to our food and our culture then what you may see 🧡
I once heard someone say Thai food is like jazz, and it really is. There’s always room to improvise. No right or wrong, no strict set of rules. And the more you understand it, the more freedom you have to play, while still honouring the roots, history and where it comes from.
Thank you to everyone who’s cooked from it, shared it, splattered sauce on it and made it yours this year. Here’s to many more 🧡🧡🧡
Love you lots xxx

Nam prig pow cheese tart 🔥🔥🔥
This one’s built on one of my favourite rural Thai market snacks: a thin crepe loaded with nam prig pow (roasted chilli jam), pork floss, cheese, sometimes ham, and a sweet, slightly suspicious mayo-type situation. It’s the kind of thing most visitors to Thailand would walk straight past, but for me it’s pure nostalgia.
I love working out how to take the Thai dishes I grew up with and share them with the world. I can’t take all the credit for this one, though. When I first had the cheese tart at @barcopains , I asked @nathansasi00 how he made it and he generously flicked me the recipe. That gave me the structure to build my own. And if there’s anything I’ve learnt most from my family, is to give credit and respect to those who have guided and mentored you. So thanks @nathansasi00 for this one ☺️
Aged parmesan mimics the umami you’d normally get from dried shrimp, aged cheddar brings the depth, and condensed milk recreates that sweet mayo hit from the suspicious one that was in the OG crepe. Instead of ham, I went with lap cheong (Chinese cured sausage) for that sweet, savoury, fatty richness.
This is the process I go through when I’m taking something from my cookbook and turning it into a dish for a pop-up, especially outside Australia. And honestly? I used to be notoriously bad at tarts. I had to admit I still had a lot to learn, so I practised and practised until I got okay at them. Because most importantly, it’s knowing there’s always more to learn.
Hope you like this one 🧡

Thanks to @kityoh , @ttony.guarino and @bahama.gold for dealing with the hot as rush. And of course everyone who came to see us sweaty in the kitchen one last time before we’re off for awhile.
Until next time ✌🏾✌🏾✌🏾
