No São Martinho, a castanha chega à mesa acompanhada de um dos sabores mais emblemáticos da gastronomia portuguesa. 🌰
Posta Tradicional de Bacalhau Caxamar grelhada na brasa, acompanhada por puré de castanha, castanhas salteadas com espinafres e um crocante de castanha e tomilho. Uma receita do @chefruipaula que celebra os sabores da época com um toque de sofisticação.
Siga o passo a passo:
➡️ Posta Tradicional de Bacalhau Caxamar Grelhada
- 1 Posta Tradicional de Bacalhau Caxamar
- 100 ml de Azeite Caxamar
- 2 dentes de alho laminados
1. Grelhe a posta de bacalhau na brasa até ficar bem dourada.
2. Retire e deixe repousar durante alguns minutos.
3. Aqueça o Azeite Caxamar com o alho laminado e regue generosamente o bacalhau antes de servir.
➡️ Puré de Castanha
- 500 g de castanhas peladas
- 250 ml de natas
- 20 g de manteiga
- Sal q.b.
1. Leve as castanhas ao forno, pré-aquecido a 200 °C, durante cerca de 8 minutos.
2. Entretanto, aqueça as natas com a manteiga.
3. Triture as castanhas com a mistura de natas e manteiga até obter um puré cremoso.
4. Tempere com sal e reserve.
➡️ Crocante de Castanha
- 100 g de castanhas peladas
- Azeite Caxamar q.b.
- 1 g de tomilho fresco
- Sal q.b.
1. Pique finamente as castanhas.
2. Aqueça uma frigideira com um fio de Azeite Caxamar e junte o tomilho.
3. Adicione as castanhas e deixe cozinhar lentamente até ficarem douradas e crocantes.
4. Retire, coloque sobre papel absorvente para eliminar o excesso de gordura e tempere com sal.
➡️ Castanhas e Espinafres
- 200 g de castanhas peladas
- 100 g de folhas de espinafres
- Azeite Caxamar q.b.
- Sal q.b.
1. Corte as castanhas grosseiramente e salteie-as numa frigideira com um fio de Azeite Caxamar.
2. Junte as folhas de espinafres e envolva até começarem a murchar.
3. Tempere com sal e retire do lume.
➡️ Empratamento
Disponha o puré de castanha no prato e coloque a Posta Tradicional de Bacalhau Caxamar por cima. Acompanhe com as castanhas e os espinafres salteados e finalize com o crocante de castanha e tomilho.
