Italy ๐Ÿค France. Finally a connection that works better than the TAV. ๐Ÿš„๐Ÿ’จ๐Ÿ‡ฎ๐Ÿ‡น๐Ÿ‡ซ๐Ÿ‡ท Gnocchi โ€œau poivreโ€ with guinea fowl ragรน and bay leaf. ๐Ÿฅ”๐Ÿฆ๐ŸŒฟ๐Ÿ”ฅ A little gemellaggio with our cousins from Oltralpe. They bring the poivre, we bring the gnocchi. Everyone brings an opinion. ๐Ÿท๐ŸคŒ Au poivre has been causing beautiful trouble in French bistros for generations: pepper up front, rich sauce, bread working overtime. ๐Ÿฅ–๐Ÿงˆ๐ŸŒถ๏ธ Usually thereโ€™s a steak involved. Here? Niente bistecca. The guinea fowl got the part, and the gnocchi negotiated full custody of the sauce. ๐ŸŽฌ๐Ÿ‡ฎ๐Ÿ‡น #weisedtodoitlate 31 Oct 2026 dry november? tranquilli. ๐ŸคŒ๐Ÿธ yes, itโ€™s still october. for once weโ€™re early. please inform the italian embassy. ๐Ÿ‡ฎ๐Ÿ‡น๐Ÿ˜‚ taking a break from booze? you can still have a little dolce vita. good glass, good company, something the paparazzi might mistake for your third cocktail. ๐Ÿ˜Ž๐Ÿ“ธโœจ ๐Ÿ’š giada โ€” parsley, lime & elderflower. ๐Ÿฅ‰ bronzo โ€” black tea, agave & peach. ๐ŸŒน rosa โ€” red fruits & tonic. zero alcohol. dressed for a very long lunch, dinner or both๐Ÿธ๐Ÿโ˜€๏ธ and before someone calls their lawyer: none of this is compulsory. wineโ€™s flowing, cocktails are shaking, november can be as wet as you like. ๐Ÿท๐Ÿพ๐Ÿ’ฆ a tavola, everybodyโ€™s welcome. just come hungry. ๐Ÿ–ค๐ŸคŒ๐Ÿ and thirsty! #weusedtodoitlate 30 Oct 2026 Days are getting shorter. Our menuโ€™s getting longer. ๐Ÿ‚๐ŸŒš๐Ÿ“œ And autumnโ€™s getting very comfortable in our kitchen. ๐ŸŒฐ๐Ÿ„๐ŸคŽ Enter CARPACCIO. ๐Ÿฅฉโœจ๐Ÿ‡ฎ๐Ÿ‡น Born at Harryโ€™s Bar in Venice, when Giuseppe Cipriani made paper-thin slices of raw beef for a countess whose doctor had forbidden cooked meat. ๐Ÿ‘จโ€๐Ÿณ๐Ÿ”ช๐Ÿ‘‘ Named after painter Vittore Carpaccio, because the colours reminded him of the artistโ€™s work. ๐ŸŽจ๐Ÿ”ด A little art history with your dinner. Prego. ๐Ÿท๐Ÿ’‹ Ours comes with hazelnuts, truffle and pickled endive. ๐ŸŒฐ๐Ÿ„๐Ÿฅฌ ๐Ÿ‚๐ŸคŒ๐Ÿ”ฅ And yes, you can have extra truffle shaved on top. Because knowing when to stop is overrated. ๐Ÿ„๐Ÿ„๐Ÿ„๐Ÿซฆ Sometimes itโ€™s good not to fuck around with tradition. Just dress it for the weather. ๐Ÿ‡ฎ๐Ÿ‡น๐Ÿงฃ๐Ÿท#weisedtodoitlate #carpaccio 28 Oct 2026 Some dishes come and go. Others somehow become part of who you are. A grande thank you to @politiken @ibyendk for including our spaghetti with caviar among Copenhagenโ€™s most iconic pasta dishes. Quite an honour, especially in a city that has learned to take its pasta seriously. ๐Ÿ๐Ÿ–ค The story goes back to Gualtiero Marchesi, the Godfather of modern Italian cuisine, who had the rather brilliant idea of bringing together two worlds that werenโ€™t supposed to meet: spaghetti and caviar (he used to served them cold, ballsy) ๐Ÿ‡ฎ๐Ÿ‡น Our version came to life during Covid, when the world was upside down and we thought a little unnecessary luxury might be exactly what everyone needed. Anchovy butter, pasta water, spaghetti, caviar and her Majesty Colatura dโ€™Alici๐ŸŸ๐Ÿฅ„ Four ingredients, a fair amount of technique, and absolutely nowhere to hide. The secret? The butter, the starch, the temperature. An emulsion that needs patience, and caviar that deserves respect. Nothing complicated, but simplicity is often the hardest thing to get right. What started as a little gesture of generosity became something much bigger. A dish that stayed with us, and apparently with quite a few of you too. Thank you @chiara.barla , thank you @politiken_mad , and most importantly thank you to everyone who has shared a plate of these spaghetti with us. ๐Ÿ–ค #weusedtodoitlate 22 Oct 2026 I am a man of the present and the future. But I believe the past deserves to be treated with respect, even when itโ€™s time to leave parts of it behind. Soon it will be nine years since I first opened the doors of Barabba. Nine years of people, mistakes, beautiful nights, terrible nights, friendships, noise, wine, and a lot of life lived between these walls. At the beginning of this year, I decided it was time to let go of the graffiti, the neons, and some of the things that had defined us for so long. Not because I stopped loving them, but because we are not quite the same people we were nine years ago. And neither should the places we create be. Together with @framacph , my dear friend @niels_stroyer_christophersen , and his wonderful gang, we set out to reshape a space that has been home to me, and to so many others, for almost a decade. We didnโ€™t want to erase anything. We wanted to make room for what comes next. I believe that respecting the past doesnโ€™t mean preserving it untouched. Sometimes the greatest act of respect is having the courage to change, without forgetting where you came from. And this is what we came up with. Thank you, Niels, and everyone at @framaprojects , for understanding that this was never just about furniture, walls, or lighting. It was about giving another chapter to something that is very much alive. And thank you to the countless people who have walked through our doors over the years. Those who stayed for one glass, those who stayed until morning, those who worked here, those who fell in love here, and those who, just like me, could rightfully call this place home. Barabba was never just mine. And thatโ€™s probably the thing Iโ€™m most proud of. The past is ours. The future is still to be written and the best yet to come. Riccardo 21 Oct 2026 Riso alla pilota ๐Ÿš๐Ÿ‘จโ€โœˆ๏ธ๐Ÿ‡ฎ๐Ÿ‡น sounds like someone should be landing a plane, but these โ€œpilotiโ€ were busy milling rice around Mantova โš™๏ธ๐ŸŒพ๐Ÿ’ช named after the โ€œpilaโ€, where the grains were stripped of their husks. their fuel? rice, of course, but done different; a serious lunch before anyone invented the sad desk sandwich ๐Ÿ–๐Ÿง€๐Ÿฅช๐ŸคŒ. Traditionally cooked on the stove with measured water, then left covered to finish in its own steam ๐Ÿšโ™จ๏ธ separate grains, more texture than the uncle risotto, full bellies, back to work โš™๏ธ๐Ÿท. Ours took a flight north โœˆ๏ธ๐Ÿ‡ณ๐Ÿ‡ด๐Ÿฆ we cook the rice in langoustine bisque for more intensity and proper Barabba saltiness ๐ŸŒŠ๐Ÿ’ฅ raw Norwegian langoustine and a little gang of candied citrus on top ๐Ÿ‹๐ŸŠโœจ. This is your captain speaking: keep your fork ready ๐Ÿ‘จโ€โœˆ๏ธ๐Ÿด๐Ÿ–ค #weusedtodoitlate 13 Oct 2026 ๐ŸŒพ๐Ÿ“๐Ÿท The Italian Renaissance wasnโ€™t all Michelangelo and naked men. Somewhere between the countryside and the noble dining rooms, chicken livers became a delicacy. ๐Ÿ–ค๐Ÿ‘‘ ๐Ÿฐ In Tuscany, they ended up on crostini. In French kitchens, they became pรขtรฉ. In Italy, we just kept finding excuses to eat them. ๐ŸคŒ๐Ÿ‡ฎ๐Ÿ‡น And paglia e fieno? Literally straw and hay. ๐ŸŒพ๐Ÿ’›๐Ÿ’š Probably the only occasion in history when calling your dinner animal feed was considered a compliment. On the menu: tagliatelle (ofc paglia e fieno), chicken liver ragรน cooked in Marsala, smoked zabaione. ๐Ÿ๐Ÿฅš๐Ÿ”ฅ Somewhere between a farmhouse and a palace. #weusedtodoitlate 09 Oct 2026 Small ribbons. Big Italian energy. ๐Ÿ๐ŸคŒ๐Ÿ‡ฎ๐Ÿ‡น Tagliolini are fine ribbons of egg pasta: flour and eggs kneaded together, rested, rolled into thin sheets and cut into narrow strands. ๐Ÿฅš๐ŸŒพ๐Ÿ”ช A little patience before a very short life on your plate. ๐Ÿฝ๏ธ๐Ÿ’ฅ In Piedmont, theyโ€™re known as tajarin, rooted in the cooking of the Langhe, where generous amounts of egg yolk make them beautifully golden. Italians have been taking yellow very seriously. ๐Ÿ’›๐Ÿ‘ต๐Ÿผโœจ Ours come with chanterelles, cep mushrooms and a healthy amount of black truffle. ๐Ÿ„๐Ÿ‚๐Ÿ–ค Healthy according to Barabba, anyway. ๐Ÿคท๐Ÿปโ€โ™‚๏ธ An off-menu special. Ask whatโ€™s hiding in the kitchen. ๐Ÿคซ๐Ÿ”ฅ #weusedtodoitlate 07 Oct 2026 Farinata was fast food before fast food was a thing. ๐Ÿซ“๐Ÿ”ฅ Chickpea flour, water, olive oil, salt. Thatโ€™s it. A Ligurian thing, baked brutally hot in wide copper pans until the edges go crisp and the middle stays soft. ๐Ÿซ’๐ŸŒŠ Legend says it goes back to 1284, after the Battle of Meloria, when Genoese sailors mixed chickpea flour with seawater and oil after a storm wrecked their supplies. The sun apparently cooked the mess. Genoa won the battle. Farinata was born. โš”๏ธโ˜€๏ธ Ours has figs + chanterelles. ๐Ÿ„โ€๐ŸŸซ๐Ÿงก Ancient peasant food, Copenhagen autumn, Barabba behaviour. ๐ŸคŒ๐Ÿ”ฅ๐Ÿท๐Ÿซ“๐Ÿ„โ€๐ŸŸซ#weusedtodoitlate 05 Oct 2026 Italian tradition says pasta in brodo is sacred. ๐Ÿ‡ฎ๐Ÿ‡น๐Ÿ™๐ŸฅŸ The gods agree. โšก๏ธโœจThe nonne have been guarding the recipe for generations. ๐Ÿ‘ต๐ŸคŒ We chose the Dark Side. ๐ŸŒ‘โš”๏ธ๐Ÿ–ค Blue cheese bottoni. Grilled pear brodo and ginger. ๐Ÿง€๐Ÿ๐Ÿซš๐Ÿฅฃ Somewhere in Italy, a nonna just felt a great disturbance in the Force. ๐Ÿ‘ต๐Ÿ’ฅ The Jedi Council has been informed. The gods have stopped returning our calls. ๐Ÿ“ตโšก๏ธThere is no going back. May the broth be with you. ๐ŸฅŸโš”๏ธ๐Ÿท BARABBA STRIKES BACK. ๐Ÿ–ค #weusedtodoitlate 02 Oct 2026 Summer is over. Allegedly. ๐Ÿ‚ Copenhagen lost four degrees and suddenly everyone is emotionally available for mushrooms. ๐Ÿ„๐Ÿท Fine. We can work with that. โžก๏ธConfit celery root, glazed with celery & mushroom mou ๐Ÿ„โ€๐ŸŸซ๐ŸŒฑ / Spinach + miso ๐Ÿ’š / Ceps & morels ๐Ÿ„๐Ÿ„โ€๐ŸŸซBasically a root vegetable went into the forest, made some questionable friends and came back considerably more interesting. ๐ŸŒฒ๐Ÿ„๐Ÿ˜ˆ The flavours are getting heartier. The wine pours remain completely irresponsible. ๐Ÿท๐Ÿท๐Ÿท #weusedtodoitlate 16 Sep 2026 Look it straight in the eye ๐Ÿ‘๏ธ๐Ÿ‘ and tell it youโ€™re too full. ๐Ÿ˜๐Ÿฐ Go on. Weโ€™ll wait. โณ Torta Caprese is Capriโ€™s famous flourless almond cake ๐Ÿ‡ฎ๐Ÿ‡น๐Ÿ๏ธโ˜€๏ธ, allegedly born because someone forgot the flour. ๐ŸคŒ A mistake so successful it basically bought a boat ๐Ÿ›ฅ๏ธ, found some sunglasses ๐Ÿ•ถ๏ธ and moved to the island. ๐ŸŒŠ๐Ÿ‹ Ours went on holiday too: peach Caprese cake ๐Ÿ‘๐Ÿฐ, lavender ice cream ๐Ÿ’œ๐Ÿจ and bay leaf oil. ๐ŸŒฟโœจ Less Blue Grotto ๐ŸŒŠ, more peach surveillance system. ๐Ÿ‘๏ธ๐Ÿ‘๐Ÿšจ Sunglasses optional. ๐Ÿ•ถ๏ธ Dessert compulsory. ๐Ÿฐโš ๏ธ๐ŸคŒ #weusedtodoitlate #tortacaprese #peach #lavander 09 Sep 2026
